Grilled mussels with garlic butter (Moules Farcies)

You will need:

Conwy Mussels, Butter, Parsley, Garlic, Shallots, Nutmeg, Parmesan cheese, Black pepper, Breadcrumbs

Mix around 200g of butter with the crushed garlic and a finely chopped shallot. Add a pinch of black pepper and nutmeg then set to one side.

Next, place your fresh mussels in a large pan with a drop of water and steam for around three minutes until opened. Carefully discard the empty half of the shells and place the remaining half in a generous sized gratin dish lined with foil.

Reduce the liquid from the mussel pan and add this to the butter mix. Spoon a generous amount of butter into each shell before sprinkling the whole lot with a breadcrumb and parmesan mix. Grill for 4-5 minutes until bubbling.

Serve as a starter while bubbling hot, sprinkled with parsley. Great with fresh white bread and a glass of chilled white wine.

Mussels are 100% safe to eat as long as you follow two simple guidelines. Before cooking, discard any mussels if the shells don’t close when tapped. After cooking, discard any mussels that don’t open. Enjoy!
