Pan fried Conwy mussels with oak-smoked bacon

You will need:

Conwy Mussels, Oak-smoked bacon, Olive oil, Mature cheddar (grated)

Start by chopping the bacon into small pieces then fry in a little olive oil until starting to brown.

At the same time, steam the Mussels for 4-6 minutes in a large pan with a little water, until the shells open.

Discarding the shells, carefully remove the meat from the cooked mussels and add the flesh to the bacon pan.

Turn up the heat and fry the mussels for a couple of minutes.

Eat on hot toast or with crusty bread for lunch or divide into ramekin dishes, sprinkle with grated mature cheddar and grill until brown for an impressive starter.

Mussels are 100% safe to eat as long as you follow two simple guidelines. Before cooking, discard any mussels if the shells don’t close when tapped. After cooking, discard any mussels that don’t open. Enjoy!
